Aged Cheddar of Ile-aux-Grues is available in three different stages of maturity: medium, old, and very old. Each of these brings a unique flavor.
Discover the medium one, a slightly acidulous but very mild six-month old cheese. If you prefer the taste of hazelnut, you will be seduced by the old cheddar, a one-year old cheese.
After a maturation of two years, the very old cheddar can be enjoyed. The texture is firmer and the taste of hazelnut gets more complex.
