It all starts with the meticulous work of our local farmers. Their main concern is to provide fresh milk to the factory on a daily basis. The cheese making process then relies on the skills of the cheese maker and his assistants.

The cheese maker causes the milk to curdle. When the milk is turned into a semi-solid aspect, the liquid is drained. Afterwards, the cheese must mature.

All those steps require a significant know-how.
